When I think of Sunday nights I think of one of two things… food and movies with my lady. If you are anything like my wife and I your weekends are tiring from partying with friends, exercising, golfing, hiking, camping, or just organizing the house. By Sunday night all I want to do is have some comfort food and watch movies. It’s the best way to start the week. Think back to your most relaxing Sunday, what did you do? If you don’t say eat food and watch a show… then… well I’m confused. The reason I picked nachos and not something harder to create is because Sundays are to chill and because of my friend Zach. My friend Zach used to come over every Sunday we would watch motocross, 8 Mile, The Breakfast Club, even Disney movies. Zach would always make basic nachos but with ground beef and he would bake them! I know right, he didn’t use a microwave?!?! I was as shocked as you are now. Zach made me realize why I shouldn’t use the microwave for everything. Somethings are just much better baked. The point is I had a great time doing it and it brings back memories of simpler times.

As you can see in the video that I made I doubled the recipe for the meat. I do this for left overs. I try to use high percentage lean ground beef so that there is less fat. I put the excess meat in a Tupperware and use it for more healthy meals throughout the week. I like to make taco salad with the leftovers the next day. I just use lettuce, tomatoes, the ground beef, low fat Italian dressing, and anything else I can find laying around in my fridge. I try to make it low fat and carb on the other days to make up for the fat content in the cheese and chips the day before. If you have a great metabolism then who cares make the nachos again (do it for me). Two pounds of ground beef will usually last for me and my wife about 3 days, sometimes less depending how many meals I use it for. Which is always helpful on my Sunday night because I always try to meal prep on Sundays, and of course Sunday is the day I am trying to be lazy. It’s all good there is always time after for Netflix, because these nachos don’t take long to make.

At the beginning of the video you will see the ingredients list, just pause the video and take a picture. Don’t forget that you can buy whatever toppings you want. The only set thing is the baking process. When you watch the video the very end has my preference and my wife’s preference. So, get picky and get lazy.
